Whole bunches of Pinot Noir were hand picked in the cool of the early morning dawn, destemmed and then split between whole cluster fermentation and traditional crushing and open fermentation, with 30 day extended skin contact. These parcels were then racked into 30% new and seasoned French oak hogsheads to mature and take on character for seven months, before bottling without fining or filtration.
Deepish red with a healthy tinge of purple, the nose is full of dark cherry aromas, rich and ripe, fruit-driven with abundant spice and nettle characters. Red cherries and plum are to the fore followed by some subtle hints of fresh rocket, anise, sarsaprilla root, damsons and cinnamon, with cedar-like ﬂavours and tannins. Absolutely delicious.
