Familar herbaceous Cabernet notes, with hints of cedar and spice. Flresh favours of juicy blackberries, rhubarb, menthol and toasted nut kernal on the pallet. Rich, fleshy middle palate to creates a balanced, savoury finish that lingers.
Woodstock has enjoyed a strong reputation for making Cabernet Sauvignon since 1982. Situated in the higher and cooler end of the Vale, the estate is the perfect home for the variety, with warm, sunny days and cool evening gully and sea breezes ensuring the Cabernet ripens well and retains its natural acidity and full-bodied style. The old vines are low yielding but deliver rich, concentrated flavours, further helped by maturation for 14 months in a mix of new oak and 2 to 3 year old American and French barrels to provide softness and complexity.
Match with beef or venison.
