At organic winery Schola Sarmenti, grapes are picked up by hand and gently laid down into little airy crates, arriving as whole bunches at the winery. Once there, grapes are further selected using an advanced sorting table. With a little more Negroamaro in this blend (60% to 40% Primitivo), the wine has deep, dark berry fruit in spades. The nose boasts a ripe cherry fragrance with balsamic, dark chocolate and tobacco on the finish and savoury dark plum on the palate with ample smoked notes and a fine-grained texture.
Extraordinarily persistent, with soft round tannins extending gently and a well- balanced, long finish this would match sizzling sausage pasta to perfection.
