Minerally, unoaked Chardonnay from the volcanic fields of Campo de Calatrava, south of Madrid. Grapes are harvested at night and cold fermented in stainless steel for maximum freshness and fruit expression.
Aromatically very clean with wonderful purity of fruit, there’s distinctive melon and stone-fruits along with tropical notes and floral elements. There’s no oak here so the palate is crisp and fresh, fruit-forward with ripe melon, sweet pear and suggestions of mango and passion fruit, all supported by a stony minerality and finely-tuned acidity.
Try with meaty white fish like hake or monkfish.
