Minerally, unoaked Chardonnay from the volcanic fields of Campo de Calatrava, south of Madrid. Grapes are harvested at night and cold fermented in stainless steel for maximum freshness and fruit expression.

Aromatically very clean with wonderful purity of fruit, there’s distinctive melon and stone-fruits along with tropical notes and floral elements. There’s no oak here so the palate is crisp and fresh, fruit-forward with ripe melon, sweet pear and suggestions of mango and passion fruit, all supported by a stony minerality and finely-tuned acidity.

Try with meaty white fish like hake or monkfish.

Producer: Quinta de Aves

Quinta de Aves is located in the Campo de Calatrava region south of Madrid, a large estate of 500 hectares although less than a sixth of this is vineyards. The rest of the estate is open farm, bush and lagoons, the birds adorning the winery's labels symbolic of the 100+ different bird species that inhabit and migrate through it.

Campo de Calatrava is in fact a volcanic field of more than 5000 square km, with volcanic activity recorded as recently as the 18th century. This makes the topology of the landscape and the soil type of the vineyards unique and highly distinctive in Spain, the volcanic rock imparting minerality to the vines, grapes and the resulting wines.

The whites here are particularly impressive, as good as many a Rueda and Rias Baixas we've tasted, with that minerality a signature.
