This blend of Macabeo & Sauvignon Blanc is cold steel fermented to bring out the fruit flavours then left on the lees for 3 months to add body and impart richness to the finished wine.
The nose is fruity and fresh, bursting with stone fruit, citrus and a hint of chamomile. Soft and supple with a lovely palate texture, this a great all-rounder, sweet melon, pear and a touch of peach kept in check by a twist of grapefruit to provide a clean, zesty finish.
The organic vineyards here lie at an altitude of 600m above sea level in the south west of Valencia. Day temperatures can rise very high, imparting sweetness to the fruit, whereas nights can be very cold giving the fruit the bracing acidity it needs to produce lively wine. Rainfall is almost non-existent, allowing the grapes to concentrate flavour.
