Clairette is an old Languedoc variety utilised in many southern French appellations. Because of its low-ish acidity, it is usually blended with zingier varieties like (as here) Sauvignon Blanc or Picpoul. Rolle (known as Vermentino in Italy) is a fashionable and distinctive variety whose perfume and acid-retention properties make it a valuable white grape in the Mediterranean’s warmer wine regions.
Drink on its own or with pan-fried lemon sole in herby butter.
