This is where Malbec starts to get serious, a wine bursting with fruit and varietal characters but with a firm tannic backbone and cleansing acidity to match up to beef steak.
Cordero (“sheep in wolf’s clothing”) is a blend from three select vineyards, all above 800m altitude. Fermentation takes place in concrete tanks at low temperature, with natural yeasts from the vineyard. Gentle extraction ensures a fine balance of vibrant fruits — bramble berries, mulberry and black cherry — with structure from the skins, and savoury, earthy characters with hints of chocolate and tobacco leaf.
