The old vineyards for Mont Rocher are perched high in the dramatic hills and terraces above the Vallée d’Agly, in the eastern Pyrenees, with a unique character of their own. Famed black schist is interspersed with pockets of limestone from the higher slopes, combining richness and power with a fresher, more finely defined character.
The aromatic Viognier produces its aromas at a certain stage of maturation, the winemaker closely watching the process during August to choose the perfect day to harvest. The harvested grapes undergo a short skin-contact maceration before gentle pressing and fermentation at low temperature in stainless steel.
Let the temperature come up a little from fridge temperature for the full aromas to show. Apricot and honeysuckle aromas precede a rich, slightly oily palate supporting flavours of peach, honey and citrus peel, finishing dry, tangy and refreshing.
