Decadent bottle-aged Sauternes-imitation from the Barossa Valley.
Single vineyard Sémillon is cordon cut in the vineyard allowing the berries to desiccate on the vine for three weeks in order to concentrate flavours. The fruit is then hand harvested, with some skin contact further drawing out the flavours prior to fermentation.
Pale gold in colour, the nose jumps out with trademark sticky Sémillon notes of nectarine, passionfruit, orange marmalade and zesty citrus peel. The palate is full, round and lush, a viscous wash of stone fruit juice with honey, orange peel, subtle oak spice and floral notes, with a clean citric acid finish which provides lift and freshness. Wonderful concentration and integration of flavours and beautifully balanced.
Some fine bottle ageing in this and good for a few more years yet. Serve with aged blue cheese or shortcake based desserts, or as a dessert on its own.
