Exquisitely premium Pouilly-Fumé from a small plot, ‘le Poirier Fou’, just east of Pouilly-sur-Loire on the Loire river.
The Sauvignon Blanc grapes are harvested at night, with gentle pressing and natural fermentation at a low temperature over 3 weeks. The wine is then aged on fine lees for 12 months to develop complexity and texture.
Crystalline and shiny with a green-gold hue, the nose is very complex with a dominance of dried fruits and gooseberries. The palate is powerful, tense, lush and quite dense, passionfruit and fig most evident, with great aromatic finesse and impressive length marked by hints of candied citrus, honey and gunflint. It’s quite divine.
Serve with seafood in rich sauces, chicken, duck or pork.
