A natural wine from dynamic winemaker Florian Bouchon, produced from a blend of Sauvignon and Sémillon.
From the Château Ferreyres vineyards, Sauvignon Blanc and Sémillon grapes are manually sorted before undergoing a two stage fermentation at different temperatures, followed by maturation on the lees at a low temperature for a further 8 weeks. Particular attention is paid to protecting to wine against oxygenation, eliminating the need for the addition of sulphur.
This is unfiltered so may appear slightly cloudy and with some sediment — this is intentional and desirable as no flavour has been stripped out prior to bottling. Delicate aromas of ripe pear, apricot and passionfruit invite you in, with hints of fresh pastry and honey surfacing later. This is gorgeously ripe and rich in flavour, pear, yellow melon and stone fruit on a minerally, textured palate, with a refreshing twist of citrus zest keeping everything in check, and a long finish revealing more savoury and spice notes.
