An exquisite and superior Prosecco from the Valdobbiadene sub-zone, the grapes for Ieta are hand-picked and sorted before gentle pressing and temperature controlled fermentation. Maturation is carried out on the lees for around 3 months to develop extra richness and complexity.
Bright straw in colour with a green-tinged foam and fine, persistent bubbles, the nose is broad and intense, aromas of pear and green apple intermingle with hints of apricot, orange blossom and tarragon. Soft but intense on the palate, with a fine minerality and enveloping mouthfeel, dry on the finish with a twist of tangy citrus.
Ideal with fishy starters, especially ceviche or sashimi.
