Pinot Noir and Chardonnay grapes are hand-harvested, with the first press giving the structure of the wine and a second press concentrating the aromas. Fermented separately, the two juices are combined for a second fermentation in bottle, followed by a long cellar maturation with regular remuage or riddling. The ‘90.10’ on the label refers to the respective percentages in the blend, 90% Pinot Noir with 10% Chardonnay.
For Champagne lovers, this is a real treat at a fraction of the price. Steely gold in appearance with a fine pearl mousse, there’s a vibrant, citrussy nose with hints of toasted sourdough, lemon curd and crème brûlée. The palate is bone dry, refreshing with tart lemon sorbet to open followed by savoury bread and yeasty notes with hints of mango and Granny Smith apple, a creaminess to the finish rounding out the flavours leaving the mouth clean but not puckering; wonderfully savoury and complex yet refreshing.
