From organic vineyards at an altitude of 350-450m, ensuring cooler night time temperatures which preserve crucial acidity in the grapes, yields are naturally limited by the winds and climatic conditions on the island. Fabrizio harvests the grapes earlier than many of his neighbours, producing bright, fresh wines with clean fruit flavours. Catarratto grapes are fermented in large acacia wood barrels, followed by a second pressing and cool fermentation in stainless steel. The wine is matured in steel with no further wood contact.
A natural wine with a complex nose of citrus fruit, lemon zest, orange blossom and honeycomb, the palate is a complex tapestry of tropical fruits, mango, citrus marmalade and sweet spices, beautifully integrated, staying crisp and fresh and with a lovely minerality on the finish. Pair up with any sauce-based seafood dishes or roast chicken.
