Champagne-method pink bubbly made entirely from Pinot Noir that’s crisp, refined and very moreish.
Harvesting is done by hand with initial fermentation in steel tanks and secondary fermentation in bottle, with a minimum 15 months ageing prior to disgorgement.
A gorgeous powder pink froth greets the pourer, hints of rosehip, rhubarb and dried flowers rising with the bubbles through the pale salmon-pink wine. Beautifully crisp and refreshing on the open, a fine citrus acidity giving way to fresh red berries on the mid-palate, and a soft, rounded finish with a hint of strawberries and cream.
Fabulous as an aperitif or serve up with prawn cocktail, or even a dessert like strawberry shortcake.
