A crisp, biscuity and stylish Champagne-method sparkler from Alsatian specialty Pinot Blanc.
Harvesting is done by hand with initial fermentation in steel tanks and secondary fermentation in bottle, with a minimum 15 months ageing prior to disgorgement.
Citrus, green fruit and yeast notes to the fore, the suave palate is crisp and taut, with intriguing hints of slate, minerals and light toast. The fine mousse bringing a lovely sheen of luxury.
Enjoy as an aperitif or pair with shellfish or savoury desserts (apple tart for example).
At first very yeasty in the nose, but after this blows off there’s plenty of yellow-apple and ripe-pear fruit, the juiciness of the front palate and the moderate acidity making this easy to enjoy. Quite a crisp finish. Drink now.
