Full, ripe and rounded, tropical fruits dominate the open with hints of banana, pineapple and melon, giving way to butterscotch, honey, fig and toasted nuts. Well balanced, with a fine minerality and elegance throughout.
Whole bunches from the single-block Chardonnay vineyard were hand selected and picked in the cool of the early morning then destemmed without crushing the fruit. Gentle pressing followed and the free run juice started fermentation in small stainless steel tanks, finished in seasoned French Oak barriques and left to rest for 4 to 6 months. It was then bottled directly thereafter with minimal filtration to capture the purity of taste and texture of the Honey Block fruit.
