Echinops — pronounced ek-i-nops — is the blue thistle that gives the meadows and hillsides a special silvery blue hue in this part of France’s beautiful deep south during summer. It’s an homage to the floral and animal life within Dom Brial’s organic vineyards where Syrah and Grenache Noir are grown surrounded by wild garrigue, herbs and flowers.

The wine is fermented and matured in steel only, emphasis on the primary fruit and secondary characters from the surrounding vegetation. Deep purple in colour with violet reflections, the nose is thick and heavy with summer berries, cherry, blackcurrant and raspberries with floral notes and a hint of spice and garrigue. Full and ripe on the palate, silky tannins and gentle acidity evoking flavours of warm summer berries and clotted cream, with hints of fresh herbs and wild flowers, and a nice freshness to the finish.

Serve up with oven-fresh bread and soft cheeses or, honestly, a bowl of warm summer berries and clotted cream, a divine experience.

Producer: Dom Brial

Set in one of the most beautiful regions of France, Dom Brial was established in 1923 in the town of Baixas, between the Mediterranean and the Pyrenees near Perpignan. The vineyards are Mediterranean in climate, protected by the cool mountain ranges on one side and the fresh ocean breezes on the other. Between the sea, the mountains and the vineyards, there is beauty all around here.

The winery was established by a handful of winegrowers coming together in the face of a major viticultural crisis at the time, expanding quickly through their solidarity and financial stability. Today the cooperative represents almost 250 growers cultivating over 2,000 hectares of vineyards in the Côtes du Roussillon.

The patchwork of terroirs, and scope for planting varietals most suited to the local microclimate, allows for the production of a range of wine styles, from high quality table wines, to super cuvées, to the natural sweet wines of Rivesaltes.
