The first certified organic Champagne, initially produced from a single vineyard of Pinot Noir but now incorporating some organically grown Chardonnay.
This is a wonderfully pure expression of Champagne, crisp, tangy and minerally with an underlying depth and complexity beautifully woven with extended maturation. The winemaking process, utilising a mixture of steel vats and oak barrels through fermentation and ageing, balances extra character with protecting the purity of fruit, while a minimum 5 years in bottle ensures integration and refinement in the finished cuvée. Bready, yeasty notes leap from the nose with hints of vanilla, almond and lemon curd, piquant grapefruit cutting through on the palate with a long, complex finish of integrated green fruit and savoury toasty notes.
