Domaine Pabiot consists of several parcels in the heart of Pouilly Fumé, that allows for blending each year for a consistent house style.
Fermented in temperature-controlled stainless steel and matured for 4-5 months before bottling, the nose is elegant but obvious, citrus and stone fruits mingling with grassy notes, capsicum and a hint of elderflower. The palate is rich and refined, an initial burst of citrus fruit tempered by gooseberry and melon characters, and finishing with delicate mineral touches and a hint of gunflint.
Serve as a refreshing aperitif or with grilled fish or goat’s cheese.
