An 80/20 split of Colombard and Sauvignon Blanc from the Ferret family vineyards at Domaine Guillaman, this is picked early in the season and at low temperatures, and cool-fermented before maturation on the lees.
Vibrant and punchy from the off, with heady aromas of tropical fruits, stone-fruit, lime and nettle characters. As if that didn’t get the juices going enough, the palate is crisp, fresh and zesty, delicious sweet tropical fruits kept clean and refreshing by a vibrant acidity.
Great as an aperitif or with shellfish, particularly oysters. We just love this.
