From generously warmed light hillside clay soils, with underlying ancient flint, the aim of the winemakers of the 100% Cabernet Franc ‘Just Terre’ is to impart fully the flavours and mysteries of Bergerac’s unique terroir.
After fermentation the wine was transferred to 500 litre terracotta amphorae where the wine is then aged for 8 months resulting in a dense and silky wine, with tannins that are much softer, velvety and better integrated as a result of the micro-oxygenation through the porous terracotta.
With smooth integrated flavours of red raspberry, strawberry and some black plum the wine perfectly expresses its chalky minerality and fruit centre seamlessly.
