Premium Cava sourced exclusively from Castell d’Or’s own vineyards, this Cava Brut is a blend of native Parellada grape (60%) and Chardonnay. Each grape is harvested and fermented separately, with blending following completion of the first fermentation. Second fermentation is then carried out in the bottle per the traditional method of Cava production, with the bottles stored in cool underground cellars for a minimum of 24 months for extra flavour development with the wine’s natural yeasts.
Pale gold in colour with a good persistence of fine bubbles and frothy mousse. The nose is gorgeously rich and complex, notes of apple and quince combine with hints of gingerbread and warm pastry, with a faint hint of aniseed. The palate is lush, elegant and rich, layers of orchard fruit — apple, pear, peach — overlaying pastry and creamy notes of vanilla and lemon curd.
This makes a fine alternative to Champagne as an aperitif, and will also stand up well to a range of fish, meat or mushroom dishes, sauces and cheeses.
