Sourced exclusively from Castell d’Or’s certified organic vineyards, this Cava Brut is a blend of the three native Catalan grape varietals, Xarel-lo, Macabeo and Parellada. Each grape is harvested and fermented separately, with blending following completion of the first fermentation. Second fermentation is then carried out in the bottle per the traditional method of Cava production, with the bottles stored in cool underground cellars for a minimum of 14 months.
Very pale in colour with a silver froth and fine bubbles, the nose is fresh and fruit-driven, with hints of tropical and stone fruits. The palate is fresh and elegant, punchy citrus with hints of apricot and green apple, with a refreshing acidity and dry finish.
Great as an aperitif or base for a celebratory cocktail, this also pairs brilliantly with white fish and shellfish, or creamy chicken dishes.
