John Quarisa selects these Sauvignon Blanc grapes for harvesting in the middle of the night, fermenting in an array of vessels to produce different styles allowing a final blend to be made to reflect Australia’s sunny and tropical-influenced south-east.
Pale straw in colour with punchy citrus, tangy nettle and sweet stone-fruit aromas. The palate opens with a burst of lime but quickly softens to reveal tropical fruit notes — banana, guava and pineapple — on a lightly lush texture with well balanced acidity.
