Not mad cow disease, BSE stands for branco seco especial, “special dry white” to us!

A blend of Setúbal native grapes Arinto (64%) and Antão Vaz (36%), grapes are picked at night and fermented in temperature-controlled stainless steel, prior to maturation on the lees.

Pale citrine in colour, with welcoming fresh fruit aromas of ripe pineapple, galia melon and green apple, crisp and refreshing on the open with well balanced acidity, an elegant minerality showing off soft white fruits with tangy citrus on the finish.

This needs freshly shucked oysters or cold, ungarnished prawns — you’d be a mad cow not to try it.
