An alluring crisp dry Sicilian white — like a Mediterranean breeze.
Insolia has long been grown in Sicily and parts of Tuscany, although it is less familiar in comparison to other Italian grapes like Pinot Grigio.
The grapes are picked and gently pressed and cool fermented in stainless steel tanks, then matured for three months with an additional two months minimum in bottle. Pale yellow and straw-like in colour, the subtle aromas of this wine are like spring flowers and orange blossom. Clean and crisp on the palate with a delicate minerality.
Pairs excellently with shellfish and seafood.
