Alphonse Dolly Sancerre comes from the south-eastern slopes of the villages of Thauvenay, Ménétréol-sous-Sancerre and Vinon and flourishes on clay-limestone and flint soils.
Grapes are harvested at night and pressed slowly to extract the best from the fruit, then cool fermented without the use of sulphites. The wine rests on fine lees in stainless steel under nitrogen until spring, developing body and length, with successive tastings determining the best time to bottle. The bottling is also made under nitrogen to further limit the use of sulphites.
Pale gold in colour with perfect clarity, the nose is open and full of fruit, gooseberry, citrus and tropical fruit to the fore. The palate is ripe and concentrated, full and rounded in the mouth with an explosion of sweet stone-fruit and tangy autumn green fruits, a steely core throughout with faint wisps of smoke and honey on the finish.
