THIS WINE is a blend of mostly Garnacha and Carignan, with smaller amounts of Syrah and Cabernet. The vineyards used vary from young (Cab, Shiraz) to ancient. The soil is Priorat’s famous Llicorella, a broken black slate. The crushed fruit is fermented in open-top vats and plunged daily by hand to extract tannin, colour and flavour. Each parcel is matured separately for 12 months in new (70%) and older barrique, before final assemblage.
