An aromatic nose with a touch of peach and apricot. On the palate it is sweet and concentrated with a fresh mouth-feel which is not cloying.
Botryitis (noble rot) is allowed to affect the wine, concentrating the sweetness and flavour.
Serve chilled with a host of fruit or cream based desserts. Also try with blue cheese such as Roquefort or Stilton, or serve as the French do, as an aperitif, or with paté based canapes.
Sauternes is located in the south of the Graves region, close to the river Garonne and its tributary the Ciron. Sémillon is the main variety used as it is most susceptible to noble rot. This area is milder and wetter than the rest of Graves. Early morning autumnal mists rise off the Garonne, followed by plenty of sunshine later in the day, making for ideal conditions for these types of wine.
