Made in a fruit driven style aiming for restraint and complexity, this tightly coiled wine has the elegance of high acidity balanced by concentration and good tannin structure. Tropical, savoury and citrus aromas linger through to the mid-palate. A small portion of the wine was fermented in old oak barrels where they aged without stirring and no malolactic fermentation to retain the focus on crisp citrus acidity.
Goes with a wide range of food, including chicken, fresh fish, crayfish and scallops.
Waipara Springs is a boutique vineyard and winery located in the heart of the Waipara Valley. Planted in the early 1980’s the vineyard contains some of the oldest vines in the valley providing the entirely estate grown wines with a depth and intensity that only old vines can produce.
The head winemaker is Frank Manifold, ex-winemaker at Cloudy Bay.
