Massive red, full bodied and luscious, with warm, super-ripe scents of berry jam and chocolate. On the palate it's heavy and velvety-smooth, loaded with big flavours of black fruit, raisin and burnt sugar. Mouthcoating, long and amazing!
There's eating and drinking here so feel free to enjoy on its own as a late-night vino da meditazione to just savour slowly as you contemplate your life, relationships, goals and so on. If that feels like too much work just pair with ribeye steak and caramelised shallots - you'll feel better after it.
Cubardi is one of Schola Sarmenti's top wines, made from 100% Primitivo hand-harvested from 65-year-old vines. Maturation is six months in second-passage, medium-toasted French oak tonneaux. Primitivo is a black grape used to make inky, tannic wines in southern Italy. Originally from Croatia, where it is still bottled today under its memorable Crljenak Kasteljanski name, Primitivo is in fact most famous as California's Zinfandel.
Schola Sarmenti, a stunning winery with soaring ceilings sculpted from local tuff and lecce stone, dates from the mid-nineteenth century and is run by the Marra and Calabrese families. The vineyards are farmed organically and within sight of the warm waters of the Adriatic. Schola Sarmenti practises "green harvesting", where a portion of the immature crop is sacrificed (i.e. picked and discarded) mid-season to increase the ripeness and quality of the remaining bunches. It also uses the ancient Puglian vine training system, Alberello.
