A dark cherry red, with purple tones. The nose combines intense mineral aromas with dark fruit and violets. The palate is strong and full-bodied, complex and elegant.
Try with cured Manchego, cured Idiazabal, Roquefort, lamb cassoulet, grilled red meat, game.
The wine was aged in French oak barrels, where it underwent malolactic fermentation. It was then left to age for another 12 months, followed by an additional eight months in the bottle before release to market. The blend comprises 60% Syrah and 40% Tempranillo.
The region’s control board considered the 2007 harvest as very good. The climate conditions during the vegetative cycle were somewhat irregular with dry periods throughout and extremely high temperatures at the end of August and beginning of September. Despite this irregularity, the quality of the grapes was very good due to the careful cultivation in the vineyards.
The aim of Bodegas Pago de Cirsus is to make 100 percent single-estate wines of the very highest quality. The estate, located just outside the village of Ablitas in Navarra, runs along a canal at an altitude of 220 metres and enjoys a continental climate with high summer temperatures reaching between 30-40 ºC.
The 135 hectares of southerly vineyards are planted with Tempranillo, Syrah, Cabernet Sauvignon, Merlot, Chardonnay and small grain Muscat. The average yield per hectare is intentionally reduced to approximately 4,000-4,500 kilos, which is much lower than what is regulated by the region’s control board. The result is excellent quality grapes with good colour that produce elegant wines with good body and a powerful structure.
