Bone-dry Andalusian specialty with fresh briny nose, light body and savoury, minerally flavours of salty olive, baker's yeast and green apple. Dry, tangy and lovely.

Serve lightly chilled as an aperitif or alongside tapas, olives, almonds or sashimi.

Producer Caballero's gold medal-awarded Fino is aged in American oak casks in a traditional Solera system that was founded almost a century ago, in 1919. 

Fino is a fortified (i.e. has grape spirit added), bone dry (definitely not sweet), pale white wine produced in the Andalusian appellation of Jerez-Xéres-Sherry. Made from the Palomino grape, it is matured under a layer of flor (yeast), which prevents contact with the air/oxygen and results in the wine's unique tasting profile. Like all Sherries, Fino is made in a solera, an intricate system of interlinked barrels whereby younger barrels gradually refresh older ones; hence, the wines don't carry a vintage.
