Exquisite pale-gold appearance with a dazzling bouquet of yellow plum and citrus. Brilliant texture and richness on the palate, with textbook fine acidity, cool minerality and complex flavours of grapefruit, mandarin, ginger and honeycomb. Truly excellent!
Great pairings here would be lobster thermidor, sashimi or salmon with a beurre blanc.
Chablis Premier Cru (sometimes seen as "Chablis 1er Cru") is an official classification of the Chablis region in northern France that refers to wines of higher quality than ordinary Chablis. There are 40 named Premier Cru climats (vineyards), located mostly on south-facing slopes of the Serein river valley near the old town of Chablis. The minimum alcohol for Premier Cru is 0.5 degrees higher than that required for plain Chablis, the aim being to encourage the harvesting of riper, better, grapes.
Château de Chemilly was established in the 1970s and is today run by Loïc and Yannick Vilain, son and nephew of the founder. The guys take a light-touch approach to their craft, preferring to allow the terroir, vines and grapes to do the talking, with minimal intervention. The stylish packaging is a cut above what you would expect from this most traditional of European wine regions.
