Cool and serious, with sinewy body, grippy tannins and firm flavours of cedar, mint, coffee bean and cassis, with a dry finish. Classic stuff!

Decant for 1-2 hours and serve with classic meat dishes - beef, lamb, duck or game.

Ormes de Pez is one of Saint-Estèphe's leading Cru Bourgeois estates. It was acquired by Jean-Charles Cazes in 1936 and is today run by Jean-Michel Cazes, who also owns Château Lynch-Bages. (Both châteaux share the same winemaking team.)

Ormes de Pez 2012 is 46% Cabernet Sauvignon, 44% Merlot, 8% Cabernet Franc and 2% Petit Verdot. Maturation was in new (45%) and one/two-year-old barrels from sister château Lynch-Bages.
Bordeaux 2012 was a year in which the qualitatively-crucial period leading up to the harvest was blighted by (sometimes heavy) rains - still, it is the best of the three vintages that follow the epic 2009s and 2010s. It was possible to make great wine only in the better appellations, like Saint-Estèphe, and even then only in modest volumes, so strict was the fruit selection that was required.
