Winemaker Gavin Quinney: "We hand picked the grapes from a block of Sémillon which we had planted a decade earlier, and pressed and cool fermented the juice. A second fermentation in bottle created a sparkling wine using the méthode traditionnelle [Champagne method]. It is dry, elegant and refreshing."

Crémant de Bordeaux is the official appellation for white and rosé sparkling wines from Bordeaux in SW France. These fizzy treats have been produced locally for well over a century but they gained "official" status only in 1990. The grapes used are the same as for the still wines.

Château Bauduc is a beautiful 80-hectare estate, with woods and parkland surrounding the family home and its Merlot, Cabernet, Sémillon and Sauvignon vines. Run by Gavin and Angela Quinney, it is a high-profile producer that is much admired by the wine trade and press.
